They are both a 40 weight oil. The 10w is the “seen” or rated viscosity when below 32ish degrees, as the W stands for winter. Multi-viscosity was the flashy term used way back when describing a typical 10w 40 or 5w 30 or similar. At operating temp…200 degrees or so…they both behave like a 40 weight oil. The 10w 40 will have better cold start characteristics obviously vs the straight 40 weight.

Neither. I’d want to know what your engine builder set up bearing numbers at, then we could discuss rpm range, forced induction vs N/A, nitrous, vehicle weight, etc.
Tell us about the build. Personally I’d consult my engine builder before I even thought about coming on a public forum and getting 27 different opinions.

Have always read and heard the same, yet any multi-weight oil still drains out of the pan way faster once warm vs cold. :/

I didn’t learn anything from it, and it is still contradictory. But I don’t want to take over somebody else’s thread. I’ll study it deeper later.

Or what if I were to use 20w50?

It's surprising to me just how many people still believe that multi viscosity oil "thickens" when it gets hot, and is "thinnest" when cold. NOT!!!! I learned this the hard way almost 50 years ago, when I was about 18 years old. Multi-vis hadn't been out that long, and a good friend of mine incorrectly told me the thick-when-hot BS. So-Wanting to completely drain all my old oil out, I foolishly tried changing my motorcycles engine oil when it was about 20° F. That'll get it all out, or so I thought!! Damn stuff came out like grease!!! Multi-vis has additives that prevent the oil viscosity from getting too low when hot. It does not thicken when hot!!! I know a few of my old cronies who STILL RUN NOTHING BUT STRAIGHT 30 and 40 weight oil in their Summer only vehicles. I run 0w-40 M1 in my C5s LS7. Works for me......

I ran 10/w/30 Castrol full syn on my last race engine, 582 BBC, 4.50's in a dragster on alky. Ran it 2 seasons, sold it and he ran it a season and a 1/2. He pulled it to freshen it up and when it was tore down you could still see where they checked the mains with a dial bore gauge. It looked brand new inside on all the bearings and cyl walls. My engine builder recommended 20W50, he was sure surprised when I told him the oil I ran.
