Piston to valve clearance?

Piston to valve clearance? Hi guys, I will be ordering this setup soon and I want to make sure I will need to flycut...
Here are my heads:
ETP CNC Ported 225 Heads:
New Castings with 11* Valve Angle
Fully CNC Ports and Combustion Chambers
2.080” Stainless Intake Valves
1.570” Stainless Exhaust Valves
Dual Valve Spring Package
Viton Valve Seals
Includes Custom Rocker Stands
332/231 CFM at .650” – 4.000 Bore
New cam:
243*-247*-112*-.629"-.629"
People have said that I will need to measure...
Well number one how do you measure?
number two is there any way you could tell ahead of time before i order everything?
