That all depends on what compression they are running. Stock LS7 would be min octane of 92. That might not be the answer you are looking for but your question is so open. Hope some of this helps.

o for the best quality fuel you can get. atoo low octane and your ignition just retards, and you wont have any hp left.

I'll be running 91 octane with 11.25:1 compression (LS7 block/crank, Lunati rods/Wiseco pistons/LS7 top end) and a healthy cam which helps bleed off some of the compression.
You can always back the timing down a little to compensate; however 91/92/93 octane should get the job done.
