Are there any reasons I could not use my existing serpentine system (truck type) + waterpump on an LS2 or LS7 engine?
Also are the exhaust manifolds same in LS1 and LS2 and LS7?

Your belt drive must match the distance set by the harmonic balancer on the LS7 which happens to be the same distance as the accessory drive for the C5 LS1/6 or the LS2 C6.
LS1 & 2 exhaust manifolds are not interchangeable with LS7 manifolds. You could use LS7 manifolds though on an LS1 or 2.

Yes, I understand. But if I also change the harmonic balancer from my truck engine, then it would be OK, correct?
It is a "truck/Jeep" application, so space is no problem.
