Default New guy to LS engines

Hello everyone I joined the forum in hopes to learn about LS engine. I've built small & big block chevys but have never messed with LS engines.
I am in the auto recycling business in San Francisco. I recently brought home a 2000 5.3 truck engine to rebuild and have questions about some electrolysis on the deck surface of the block and on the cylinder heads near the water jackets.
Can the deck & the head surface just me surfaced some and no worry, or will I need to get thicker gaskets. I went on typing this hear and relized this is the introduction place.
