ARP makes a 1" long 5/16" reduced head header bolt that is AWESOME. Easy to get a wrench on them to tighten them, even with big primaries. They are long enough where they won't backout. (That is unless you tapped the bolt homes in teh heads, in which case most any bolt won't hold tight, hell I don't think studs will even work if that is the case)
Mr. Gasket is the only company I have found that also makes a reduced header stud setup. It is 3/8" going into the head and 1/4" on the header side with locking nuts. Now they rate these as a 'race only' item, and I believe that is because they are only black-oxided, thus they would tend to rust over time, and if the 1/4" portion were to snap off I am not certain how successful you would be at trying to remove the rest of it in the head. If this isn't a daily driver, only sees good weather, never rain, and in general is treated like a race-only vehicle (like quite a few on here do), then you should be fine with them.
