Default Getting rid of wires?

I just got a used Bigstuff 3 software and im getting ready to install it. Im looking to get rid of any wires that i dont need in the engine bay and i was wondering what the best plan of attack was. Is it to remove all wiring and start from scratch or are you guys tracing wires and only keeping what you need. The plan is to keep only what runs the motor and tranny,all exterior lighting, interior lighting, power window, power locks, radio, and possibly the factory gauges. Is there a way to totally get rid of the facory computer under the cowl. This is going to be a strip car for 90% of the time and driven occasionally on the street. Just looking for the best plan of attack and any info that may help. Also looking for and wiring schematics that would help with tracing where wires go. thanks for any info.
