Drain the radiator and remove the two block plugs. One doubles as the knock sensor, and the other one is on the driver side (small square plug). Pop off the oil cooler bypass hose off of the bottom of the radiator (bottom driver side) and you're good.

Put whatever coolant you have now in (green or orange). Just don't mix the two.

You need to unplug the sensor and then unscrew it out of the block.

Typical capacity is 15.1 quarts for A4 cars, 15.3 quarts for M6 cars.

Get a good sized drain pan, one that will hold at least 5 gallons. Pull the lower radiator hose first, and drain into the pan. Once you've got all that will come from there, go to the block plugs and pull them to get the remainder.
If you have pets, make sure to keep them away while you do this, antifreeze will kill them quite dead.
Reseal the plugs with either pipe dope or teflon tape, and put them back in. Put the lower hose back on.

AllData says my '96 has a capacity of 15.1 quarts (just under 4 gallons). Be sure what you put in there is a 50/50 mix with water.

Nothing at all wrong with being new to this. Ignore the trolls, and ask lots of questions...someone here will help. We aren't born with wrenches in our hands.

Honestly it doesn't matter what coolant you put in. Just make sure that you completely flush out the engine if you are going to put in different coolant. I used Dexcool just because that is what GM recommends, but the green stuff will work just fine.

Hot or cold assumes you're topping it off, not refilling the whole system. Just put in what's called for (15.1 or 15.3), as that's for a completely empty system.

i think the reservoir(long tube) is for topping off or just extra in case you loose any. There is no mark just make sure there's some on that dipstick. Also make sure you bleed the system when you are done.
