Question When I got the car the car rans good and the oil pressure was good and all so during the winter I took the motor out and replace all the gaskets and put a bigger cam in it and a new valve train. What would cause the oil pressure gauge to drop to almost zero but then goes to normal when the gas is applied?

Put a mechanical gauge on it and see if it's really dropping. If it is, either use a little thicker viscosity oil or rebuild your bottom end with tighter bearing clearances.
