Default Coolant Temp issues...

Ok, I just finished my 383 Stroker build and I am fighting massive cooling problems. So here is what is happening.

My laptop is plugged into my port and datalogging. It shows my Coolant Temp at 240* while my gauge on the car shows the temp at ~180-185. I have the fans on constantly. I have an electric water pump. Here are my findings:

Water pump IS operational.
Coolant IS NOT leaking anywhere
Radiator cap is brand new
Fans are ON
Oil Pressure is good
Both temp reading move together but at different temps. (I.e. when I shut the engine off, they both drop, when the engine is running, they both rise.)

Now, the laptop says I am at 240-250 when I shut it down. The water IS NOT boiling, no steam coming from the coolant tank. Coolant crossover tube is on. Crossover hose and coolant res hose are in the correct positions on the radiator. I have bled the system.....multiple times...

WHAT THE F*** IS GOING ON????!!!!

Also, I know the laptop is getting its temp from the sensor on the WP and the gauge gets its signal from the sensor on.the block...how do I verify what they are actually reading in case the gauge on my dash is off or my laptop is getting a bad signal??

Thanks shbox! I ohmed out my sensors and the head was reading 511 which is somewhere between 140* and 158* and showing 165* on the gauge...the water pump was reading at 507 which is same as above and showing 194* on my laptop. I don't know what the signal cross is but my laptop is showing me the wrong number and I thought my dash gauge was off. Turns out the dash gauge is actually ~10* hotter than what the car is actually running at..SO, my car was never actually overheating because the dash gauge only reached 210 at its hottest! I am VERY relieved!

Thanks again Shbox for sending me that link!
