head bolts? Which get thread sealant? I mean do you just thread seal all of them and call it the day?
Or do you have to know which ones get thread sealants/silicone ?

I've always used Permatex Ultra Black on manifold bolts and head bolts. There are head bolts at the front and back of the block that do not tap into water jackets (at least if it's an LT1 block). I've always used just a very light touch of oil on the bolt threads for those.
You want a nice goopy sticky thread sealant that won't wash off and is impervious to coolant, fuels and oils. Permatex High Tack will stay in the threads. Any sort of Moly or Teflon "sealant" are actually lubricants and will eventually wash away.
My 1996 GM service manual (Page 6A3A-18; Install Step #3) simply says to:
"Coat threads of cylinder head bolts with sealing compound"
The text never makes a distinction between any that do indeed get sealing compound vs. those that do not - so, to answer your original question - Which get thread sealant? - according to GM, All of them.
