Default Fuel Issues with LT1?! Help

Just bought the car a few months ago. i prolly havnt even put 2000 miles on it yet. i only drive it on nice days an to work is about the farthest i drive it. other then the occanional drive to where i grew up. Roughly 30 Miles from where i live now.

Previous owner put a gauge priller in it, with 3 gauge holes, but only installed 2 gauges. 1 being a O2 sensor gauge, an the the other being the fuel pressure gauge. Both witch are digital.

Sense ive bought the car the Fuel gauge has always read 03. regardless how you drove the car. cusin or flat out running the **** out of it...its always read 03. other then when you first turn the key to the "on" postion it acts like maybe it goes threw the number then stops at 03. then that when i turn the key to start it

few weeks back i was crusing home from work an noticed it dropped to 01.
i didnt notice any power loss or any problem with the car so i just ignored it.
sense then, its done it a few times an again, no power loss, nothing...so i ignore it.

well today it was what felt like 90 degrees out an i had a doc app. so i took a personal day off work. The Mrs. got a baby sitter for the day so she could go. Afterwords we figured lets go for a drive. T-Tops out an go see my folks. so the 30 mile highway drive we went. drove as it dose any other day. Got to my dads, was there roughly 2-3 hour. car sitting in the sun. THen we left an went to go grab lunch. not even a mile away from my dads house i noticed the fuel pressure gauge had done its thing an dropped to 01 an stayed this way the whole time i was driving.

while waiting at a red light for what seem like forever i noticed the car of course was getting a little hotter then normal. Normally it dont go above 180...it was now at 200 but didnt go any higher.

finally the light turned green an i attempted to go, but as i go to turn left the car damn near falls on its face. acted like it was running out of fuel. well with oncoming traffic i pushed in the clutch an tried to rev it up...i needed to get the hell out the way. it reved up ok i guess, but as i would go to let out the clutch an take off it would spit an sputter as if i was running out of gas. keep in mind it had a half of a tank. luckly there was a gas station right there so i just kinda strolled in there an before i could even come to a stop it died. i turned the key off an turned it back on to listen for the fuel pump. the pump came on an was priming like it normally dose. after 3 tried the car finally started with a little help from me pushing on the gas peddle. after that, it idled fine. reved up fine. no hessitation.. nothing...so i just thought...hmmmm....well i know my dad has every tool you can think of so i attempted to just at least make it back to his house. as i take off it drives fine all the way back to his house. we pop the hood, sorta just look over it. turn the key on to listen at the fuel pump again, it sounded fine. started it. let it sit there an idle for a little while. he drove it around the block...the thing acted normal. so i figured, well, lets try an get it back home (30 miles away) an there i can do whatever i need to do to it! i wasnt even off his street an it started spitting an sputtering...at then point i was a little pissed so i just punched it to the floor (in 3rd gear) it spit an sputter one last time them Bam it took off an we went to 6k rpm till i let off. drove perfectly fine all the way home after that. it now sits out side. an untill i figur out the problem it wont be going far from home. My guess is, maybe a bad fuel pump. it dose have the stock pump in it. car has 160k miles on it. the opti was just replaced 6k miles ago with a ac delco opti. so my question is, Do yall think it could be the fuel pump also? fuel pressure regulator maybe? an why dose my gauge read 03 or 01 when would think it should say 30 with lt1s having to run on around 30lbs of fuel pressure?!
