Will the stock oil pump work for my 383 lt1?

Your builder should tell you if he used standard or wider bearing clearances
You absolutely want to use a windage tray
You can use the stock windage tray with a 383. You just need to space it 1/8" further away (pic) by using washers between the tray and the nut on the long main studs it attaches to
If using the stock oil pan just put it on with the engine on a stand and while someone turns the motor over with a socket/wrench listen with your ear against the pan for any scraping while the person rotates the motor. I use the stock pan and windage tray on my 383. I did need to "slightly" push out the bottom front of pan to clear #2 rod bolt. It barely made a scrape on the pan. I just used a folded towel and put pan on it and used the big end of a baseball bat to push out from inside of pan. Very simple as it just needed a hair of a push from the bat to clearance the pan
on the oil pump, get a steel drive shaft from ARP or Miloden vs re-using the stock one with the plastic (read it will break) collar. Those oil pump drive shafts are around $12 from places like Summit
