Okay, on the home stretch here. Feeler gauge seemed to indicate 7.100". To double check everything, I used dry erase marker on the valve stem, put on the rocker arm and rotated the crank. Here are the witness marks I ended up with, pushrod length is written on the image:

I've read in a few spots that the focus shouldn't only be on the witness mark being close to the center of the stem, but that it should be close to the center (possibly favoring the exhaust side a bit) and as narrow as possible. With that in mind, is the 7.100" best? Should I measure shorter?

Yes you want a sweep that favors the exhaust side and as narrow as possible, but you do not want to have it too far on the exhaust or it could load the valve guide and cause excessive wear. If it were mine I'd sacrifice a little of the sweep for something a little more close to center and would do the 7.05.

Perfect, thanks everyone! I was thinking about measuring shorter, but I thought that the 7.050" was pretty close to good.
