Wow your car must 60' like hell!! that's very impressive numbers for that cam. I definitely vote for the forged piston 355 shortblock. I'd get some nice ported heads and a good size cam. If you got an automatic definitely get a convertor! 2800-3000 would be very suitable for the street.

I would keep the stock crank, get some eagle h beams or similiar rods w/ arp bolts, forged pistons and just go with a 355. Then go with a LE setup, LE1 or 2 will get you close...but you will still need all supporting mods. LTs, tune, clutch/converter, gears...etc. 3K might not be enough. Then it's only a matter of time for other things
I dunno GMPP rates the powdered metal LT4 rods to be safely good to 500hp, and thats severly under rated, on my one pass before I left for kuwait and it was still misfiring like hell I trapped 118 with 3,400 lbs, about 480flywheel HP, I plan on swapping to oversized valves, a 58mm TB (48 now) and an electric water pump + make it run right to hit 500flywheel..well withing safe.
but then ima spray my 200 shot muwahaha!
and it 60'ed alright with the hotcam and 3000 stall (1.56) but it slowed down to 1.61 with the bigger cam, hopefully a 4,500 stall might get me a 1.4x
