Spark Plug Gap

I have a '94 Z28 M6, with the following mods according to the previous owner. Most of my driving is below 50mph, I am about to change plugs to NGK TR55IX what gap would you guys recommend.
383 Stroker AFR-210 Heads Ported w/210-160 valves
Comp Cam 1.550 Springs Titanium Retainers 10 degree locks
LT4 intake Port Matched to heads
TPIS Solid Roller (700-701) .572 lift 278 duration Comp Cam Rollers
Cloyes Roller Chain
Titan Oil Pump - Adj. Oil pressure
30 over JE Pistons 10.3 ARP head studs Bottom end bolts and Deck plugs
Balanced & Blueprinted Bore & Hone with deck plates Align honed
EGR block off - no air pump
Lingenfelter 58mm throttle body
Granatelli Mass air flow sensors - G2 high flow rubber bellows
27lb. Injectors
TCI Damper
Meziere elec. Water pump 160 degree thermostat

I was told the compression is 10.5 and the hp is 550. I am curious though about the injectors, are they big enough, as a relative point (I think) the fuel pressure is set at 62 psi, when I got the car it was some where between 75 & 80 psi. Unfortunatly I have been experiencing some minor probs which has prevented any performance tinkering.
