lot of guys run the Pace on their LS1s, I'd say bang for the buck they are great. Not sure on the LT1s how the Paces are. Ceramic coating is fine, I think some companies do a better job than others with the ceramic. Kooks are all stainless, have a stepped header option (first I've seen in mass production outside of custom built headers) and they are supposedly producing more rwhp than the average mass produced LT header out there. Personally I'd believe that with a dyno before/after with headers only, thats the only accurate way to measure a benchmark.
Wish I could help with the passenger side plug install, would think like most header, drop the starter and reach from below with a sparkplug socket and box end, not sure on #2 & 4 plugs how they are from the top. I'm going with Speed Specialties (keep the ac & ps) alternator relocator on my build so I'll have plenty of room.
Couldnt be happier with my jet-hots. As already said the kooks are awsome and from what I hear fit a little better, so theres less clearance issues with them. If you have the money go with the kooks, if not jet-hots are a very nice and much cheaper alternative.

Liked my JetHots too, on the new build I decided on KOOKS, was tired of fighting the leaky #1 primary slip-fit, tried everything on the market next to tig welding the damn thing in place. Like you said they aren't cheap but I make up for the expensive stuff by eating Ramen Noodles
