Question Hesitation problem!

The other day I pulled a U-turn and gunned it, the car felt like it was pulling pretty good till it hit about 3k, then it felt like I hit the nitrous button or something (which I don't have) and the car really started to accelearte much better then before. Normally it doesn't do this and the acceleration curve is smooth all the way through the rpm band. Its done this to me once before when I was doing an autox. I know I'm not imagining things because both times I had somone in the car and they felt it to. This last time I was visiting in vegas and when I got back home in North LA the car felt much stronger then usuall. However during the drive back it felt pretty sluggish. Now the car feels like normal again.

I had a primary O2 sensor go bad on the passenger side (used a GM part) shortly after the header install, should I go back and replace the other O2 sensor as well?

Could this be an opti problem or MAF problem?? Knock sensor problem?
I'm guessing at this point.

I've also noticed in the past few months that I am getting some valve train noise inside of the car, is this normal for LT1's?

My car only has 73k miles, mods are in sig.
