Default oil pressure reading 80 help please

i just changed my oil for the first time since the swap into the falcon, and the oil pressure is reading 80. first let me say the i have modified the oil pan heavily. i cut the bottom off of it and built a tunnel right through the middle for my steering likage to go through, the i built walls around the tunnel and welded the bottom back on, i would post a pick but i dont know how if somewould would tell me i would. anyways, i measured the pan after i fabricated it and it was suppost to hold 7 quarts. when i changed my oil i started by putting 6 qts in it and then i started it up to let it fill up the filter and whatnot. when i started it the oil pressure gauge rose to 80 and i shut it down. ive started it up a few more times and i get the same thing. i cant get an accurate reading on how much oil i have in it except that if anything i think it is about 1/4 quart low. pressure usually reads about 60 when its cold, 40 when cruising, and 20 when idling warm. im not sure what could be causing it to read 80, too much oil or not enough wouldnt affect it? my only conclusion is that it is new oil and it is really cold. im scared to let it warm up due to i might damage something in the process, anybody got any ideas? thanks a lot

First, you are right to wait until you debug this issue. Do you trust your gauge?

cold oil will make it much higher, does the oil have the same viscosity as the previous oil you drained out? if so what are you running?

Only time I had this happen was when I somehow managed to disconnect the wire from the sensor. lol. Think too much oil can also make it read high, if I remember right (was lazy one day, had a shop change my oil.. they forgot to drain it.. haha).
