Default Clutch Disc direction

I have a powergrip clutch that isn't organic on both sides, one is metallic or whatever, and the other is organic. A shop told me to face the organic toward the steel flywheel, but I believe the metallic should face the flywheel, and the organic should be against the pressure plate. I'm about to reinstall the 6.0l in the TA and need to get it installed the right way before dropping it in. Any feedback would be useful. Thanks in advance!

Well, first off, does the disk appear to be "universal", where it can actually fit against the flywheel on both sides?

I know both my SPEC and oem z06 clutch discs have one side where the spring system is a raised area, and that area can only fit towards the pressure plate.

Well it looks like it SHOULD go the way I'm saying, but it will physically fit the other way, strange huh? I'm going to assume that the metallic faces the flywheel, makes more sense.
