Default "While your in there" advice

I have a 2000 C5 Corvette that I plan to do the PCV and valve covers on, thinking about doing the valley cover reseal as well. Any suggestions on other items I might want to replace while I'm in there? I was thinking of also doing that small coolant passage hard line while im in there, do those ever fail or cause issues?
The car has 168,000 miles on it and I don't have any service records.
I'm a somewhat experienced mechanic the two bigger jobs I've already done on this car has been the upper oil pan and a transmission rebuild all the way down to the rear main seal to list a few.
also was curious of any upgrades or retrofits that would be a good idea? I live in California so smog is a factor.

Your likely to see some deterioration of the harness, id get some loom on hand for repairs if necessary

knock sensors would probably be a good idea, but those are kinda iffy these days. Been reports of issues from new ones.

Definitely do the knock sensors and their wiring harness. Consider replacing the cam position sensor because you will have an easier reach and view for it while the intake manifold is off. Those "small coolant passage lines" are also known as the "steam vent purge lines". If the engine never got good periodic antifreeze coolant replacement, I suppose those lines could clog with rust or scale. Remove them and see if they still flow clean water. If not, replace them or maybe try rodding them out with a stiff thin wire. It is important that these lines flow because they also help to remove air pockets from the engine's water jacket.

Put in a new oil pressure sensor while the intake is off.

+1 on the oil pressure sensor and the screen underneath it, if equipped. It's another tough, nearly blind reach across the top of the intake to change it later.
