they make the physical engien size bigger with the same size block buy stroking the crank(making it longer) and/or boring the cylinder walls to a bigger size.

Its not cheap, but you make good gains with the added displacement.
just the parts kits can range around the 2k dollar mark....thats not including the machine work to the block
