I think it's when fuel puddles in the intake manifold...mixed with the incoming nitrous and...BOOM!

Nitrous back fires can be caused by several reasons.The most common reasons are.
1.Hitting rev limiter(This cuts fuel supply).Fix-window switch.

2.Spraying under 3000rpms(not enough cylinder pressure)Fix-window switch.

3.Popping the kit in the burn out box to purge the system,then letting off quickly.-Fix purge kit.

4.NOS Wet kit nozzles were known for fuel puddling-Fix NX Nozzle-

THE MOST COMMON IS LACK OF USER KNOWLEDGE.
I sure there are some people here that may disagree.Im not looking for a debate.This is my point of view from my years of working with N20.

have to agree with Dave here...
Most nitrous backfires are user error.
