Well, personally I would have the PCM reprogrammed and then dynotune with the mods you have listed. Without AT LEAST dynotuning with a MAFT your definately not getting maximum output from that setup! As far as N20 goes if you haven't at least ATAP'd it how would you know if your running lean. Hate to hurt that engine if detonation occured. I wouldn't even hit it with a 75 shot if I were you.

No, do not spray. With stage II heads and cam and your mods, you have leaned out your A/F quite a bit as it is. Since you have no ATAP to monitor I would not risk my motor even with a 75 shot. It's better safe than sorry IMO
Lean + nitrous(WAY MORE LEAN) = bye bye motor.

Find a dyno shop in your area with wideband 02 capabilities. You'll need a MAFT(mass airflow translator) to make adjustments to your A/F ratio.
Reprogramming can be done in various ways. Do a search for more info on "PCM Reprogramming"
