EFI Live Custom Tables part one
The way it works is you tap into the Red Connector (there are two big connectors, one Red and one Blue), at Pin number 56.
Both the F-Bodies and the C-5 have this without any wiring. The F-Body the PCM is availible under the hood. The C-5 the PCM is hidden behind the Passenger front tire.
PCM connectors are available from eficonnection for .50 cents,
Crimp it, solder it to 18 gauge wire going to a toggle.
Run that wire to a toggle that will ground it when closed and your in business

EFI Live Custom Tables part two will be written mid Feb when 860 Performance and I try this out on the dyno.

It does not have to be used for custom Nitrous tables either it was origionally conceived as being a hidden kill switch that would use tables that would not allow the car to run, or limit the cars abilities.
Once I have the OS loaded I will put up screens of the tables that are available. That will be early Feb.

After asking some more questions, Pin 56 is an unused ground (it is not an unused Valet PCM feature). The Custom OS to enable and use this unused ground is exclusive to EFI Live. As competitive as EFI Live and HPT are, the best place to ask if HPT will be able to do this in the future would probably be the HPT forum.

How many tables are involved?
As far as I know there is at least the fuel and spark tables.
I have to compare my 99 OS "table for table" on the swap to the 02 OS; then I will flash the custom OS and merge it with the 02 OS and have access to the alternate tables.
I am learning as I go so bear with me on my limited knowledge.

Also if the car is going into the shop, I can use that toggle as a Valet mode, and limit the RPM/speed the car can be driven.
