how hard is it
Since I removed all badging on my car doors, now turning my attention to the front and the back, my headlight door skins need repainted anyway, is it that hard to sand/grind down the PONTIAC letters on the drivers side lid? Also, how hard is it to fill in the PONTIAC letters on the rear bumper?

You can fill the rear with either body filler(Bondo) or 3M urethane bumper repair kit. Proper prep is key here. Sand with 80-100 grit to give the filler something to bond to. Sanding to the primer is best. Block sand to 320, prime, paint.
The light lid is metal right? Same procedure for that.
Check out Eastwood or local paint supplier for filler. Avoid Bondo, as it's not the best product out there.
Grab some grey and maroon scuff(Scotch-brite) pads. I use these for the hard to reach corners. i.e., recessed letters.
Pick up some wax and grease remover, nitrile gloves, blue paper towels to help keep your job clean. Get a couple different sizes of masking tape too to help protect areas you don't want scratched/painted.
Take your time.
Best of luck!
