Engine running lean

Engine running lean Just had the trans rebuilt and now the engine is running lean. Dealer scanned it and the fuel trims are at +8%. The engine pings at times out on the highway at steady throttle and the throttle is very touchy accelerating from a stop.
The exhaust also sounds dead, not the usual sound this car makes. If you drive it hard it seems ok, normal acceleration etc. but cruising at 55 mph the engine doesn't respond to throttle input like it normally does. It feels lazy. Dealer says it might be too much Ethanol in the fuel. Tired different fuel but it seems the same.
It also surges at 55+ mph cruising.
Any ideas? TY
