Default Turning off code 0327 killed the car

Once in awhile, my car will throw the SES light for P0327, Knock Sensor 1 low voltage. This happens only after first starting it and only after just putting it in drive and driving down the street for a few seconds under light throttle. Once in a great while, this is complemented by a Knock Sensor 2 low voltage code as well.

This past winter, I replaced both sensors and harness with the revised units and sealed them in the front with black, sensor-safe RTV sealant as directed by the TSB. The car still does it sometimes.

I spoke to my tuner and asked him to do something about this, so he turned off the code for 0327. Once this happened, the car wouldn't hold an idle and giving it gas made no difference, the car refused to run for more than a few seconds. He turned it back on and the car ran again with no issues.

Why? I had him desensitize the sensors for like throttle under 1600 RPMs, so we'll see if that works. But what's the deal with the PCM and that code not allowing the car to run?
