Default Seeking advice on mail order tune/engine break in

I have a 2001 Camaro SS with the following mods:

LS3 block with 4" compstar crank - 416 cu in, all forged internals with -15cc pistons (short block from SDPC)
ported (by Tony Mamo) AFR 205 heads with 1.7 yella terra roller rockers and 8019 springs with stock AFR valves and combustion chamber volume of 60cc
KaTech's LS6 ported oil pump
LG's G6x3 cam
Nick Williams 92mm TB
FAST 92mm intake manifold ported by Tony Mamo
Stock Mass Air Meter - 78mm
Compression Ratio = 11.34:1
dual Walboro in tank fuel pump from Lonnies Performance, stock lines and rails
Bosch Design III drop in fuel injectors in 46@ 3 bar
T56
OZ700 clutch
Moser 12 bolt with 3.73:1 gears with HD Eaton Posi
CAI, Fast Toys I think?
Kook's 1 7/8" long tube headers to their catted Y pipe to Magna Flow exhaust
25% U/D pully

This has not yet all been installed, and should be complete within the next couple weeks. The only things not brand new is the clutch, trans, and 12 bolt. I want a mail order tune so I will be able to drive the car and break in the engine without putting it on a dyno right away. Am I going about this the correct way? What would you do given this situation?
