Default stft ltft goals

I just took a ride in my car and logged my fuel trims, and I was wondering, what should my goals be for fuel trims?

I let them engine warm up, I then reset my fuel trims with the hp tuners scanner. I logged them in sd mode with dfco, and cot disabled. my histogram for ltft is mostly +3 to +5

You should shoot for 0 to -3.

LTFT. If it were both you could be up to 6% out. Less than 3% is good but 5%is acceptable.

Understand how they work. LTFTs adjust to keep the STFTs close to 0

Long term yes. In the short term you can have both reading +/-3%. Eventually you'll end up at +/-6% on the ltft but it's still best to keep the total under 3% combined.
