Need help deciding Speed Density or MAF

Old dyno sheet in the car when I got it says it made 433hp 369tq in 2013. I have tune scheduled in a couple weeks and Im wondering if I should just stick with the speed density or if there would be any benefits/advantages of going back to a maf tune with my setup?
It drives decent and gets ok mileage. The main thing I dont like about it is that it has a really high idle before it loses all ground speed. I'm assuming this is a setting in the tune. At low speeds it will begin to buck like crazy if you're in too high of a gear and it sometimes wants to die rolling up to a stop, from past experiences this is kind of normal for cam cars? Not sure, this is my first.

I prefer a MAF tune with a cam that doesn't produce a ton of "backwash" air. SD is more crisp, but the MAF is more stable. A good MAF tune includes tuning the VE table as well, so you get the blending GM intended...
I found a used K&N CAI kit for a GTO on ebay fairly local and ordered it, hopefully it shows up in just a few days. It has a MAF in it so I will get it all mounted up and figured out.
I've been reading about relocating my IAT sensor to a more ideal location than in front of the radiator, any advice on that?
