Default Standalone harness

I'm getting ready to start on my harness , 02 Escalade , to make it a stand alone bare bones , I've done a lot of research on doing this , my question is how do I know what wires I don't need . it's a 6.0 going in a 66 Mustang , but when they say for example ( pin 11-KS 2 signal rear sensor pin B ) I haven't a clue what that means , do I need it ? , Where can I find out what I need to leave and what to cut out ? thanks , ANY help will be appreciated
