Congrats on getting it up and running man. I'm glad you got the ECT stuff worked out, and the cam sensor being the same problem, two birds one stone! Your AFR reading wonky is definitely caused by the longtubes, it's not a big deal. Even after you put exhaust on it will probably bounce around a little, and the stock narrowband will hate the longtubes as well. I like to just command my idle to around 1200rpm to get a true reading for a few seconds to diagnose things like my flex sensor wiring. Just enough to smooth out the idle and get a steady stream of air.
If your narrowbands still aren't working properly after you check wiring (and maybe recheck after looking at the wiring diagrams on the forums like last time...) then be sure to check fuses. When I was trying to get closed loop up and running after several weeks of open loop only in my turbo setup, I couldn't get my o2 sensors to work anymore. I even went and bought new ones even though my old ones were working when I disabled them in my tune. Tried my old tune again, tried everything. Turned out I had blown a fuse when I made an extension harness to move the passenger side one. I felt so stupid.
