I'd like to know if I'm on the right path here with this tune and logging process. It seemed to straighten out fairly quick, i wasnt able to get a few more runs through it though to get it richened up a bit more. You want to see slightly negative or zero in the trims if I'm not mistaken? run it a touch rich for safety?
When I loaded the tuned up VE table to the tune that I actually run on the street i saw that my trims were back to high single digits. Would this be because the MAF table hasnt been touched yet?
I currently don't have my HPTuner laptop on me, so I can't look at the tunes/logs you have attached (but someone here will I have no doubt). However I can answer a couple of things:

Correct. The general rule of thumb is -3 to 3. I prefer -3 to 1. A touch rich is better than a touch lean, imo.

Correct. Once you tune your MAF curve, you'll be set. Remember, the VE table is used in the "background" for smooth throttle transitions, *or* when you are running it in speed density mode, which you were when you did your VE Tuning.
If you're in the high single digits all the way across (or close to it) multiply all the values by 1.1. This will add 10% across the board. It's better to tune when you're running rich, rather than when you're running lean.
