couple questions and 2 codes

1-codes p0171 and p0174. bamk 1 and 2 lean.
i had ported and descreened my maf and cleaned and oiled my k&n filter and the light came on. cleaned maf and the codes came back, cleared them again and gutted my cats and put in o2 sims, went away. that was a few months ago. did a cam and had it tuned by speed inc. ses light came on again, same codes, p0171 and p0174.......why????
2-are the temp gauges really this bad? 160* stat and fans programmed to come on at 160* and the gauge reads just below 210.
more concerned about the codes than the temp. im going to hook it up to the scanner at work on thursday and see if i can find out what is going on.

1) Get it tuned again. Have them adjust your MAF table for the ported MAF this time.
2) The temp gauge is a dummy gauge installed by GM for the 'other' folks that buy these cars. It will read in only 4-5 positions. Use a scantool to check you engine temperature instead.
