Default Tuning w/ cats in or out?

I'm wondering how much swapping between having cats in or out will throw off my A/F ratio. I've got FLP LT's and soon will be putting in a 226/226/112 cam. My SS is not a daily driver, but I drive it hard on weekends. I had my cats out for about a year, then put them back in, to regain some backpressure and quiet the car down a little. I have a loudmouth catback (which I love BTW). Anyway, after the cam is in and I go to get professionally tuned, I wanted to know should I go with the ORY for max power, or with the cats in, because that is how my ride is usually set up? I know the high flo cat will rob me of some power. Will it throw my A/F much if I tune with the ORY, then when I get back home put the cats back in, or should I tune with my car setup how I intend to drive it? I love the flexibility of the FLP's, because I can swap between cats in or out in about 15min. All advice is appreciated. Thanks.

tune it the same way you're gonna drive it.
