If you founding you AFR is going fat at WOT, multiply the whole table by 110% for Auto and 115% for manual, then run the car again and see if this has corrected your AFR, if not just increase by 1% across the whole table again to your AFR start to level off.
I wouldn't try going over 115% for and Auto or 120% for Manaul as you would be starting to turn the COT protection off, if you still can't get it to level out you got another problem as well.

I had my vehicle running pretty good last week. O2s around .89 and feeling strong. This is with cats on. I went to the track. Same exact tuning, except I took off my stock Y pipe and ran a pipe w/o cats. My first run had my O2s getting up to 1.00 at times and averaged .98 I think. Nothing else changed, just removed the cats. Rear O2 sensors were off and the sensor plugs were open. Codes were turned off with Edit.

Re: How to adjust COT on a car with cats? BigTex, I would guess by reducing your back pressure with a catless y pipe you cause your car to run leaner. Upon running leaner your ltrims will go posative and add fuel to your Powern Enrichment mode (what your car goes into during wot). This is the same exact event that occurs with putting on headers. More air out or in causes car to run leaner. Same thing as a carburated car needing more fuel with onpen headers vereses less fuel with full exhaust.
