PCM Learn???

PCM Learn??? I was reading on another thread that a few members would disconnect their battery cable so that the PCM would forget their driving habits.
How does the PCM do that? Shouldn't just the following be taken into effect??::::airtemp airflow fuelflow.. how hard you smash the gas pedal??
They say the car runs better after doing this,,are they just seeing the car run LEAN on it's relearning curve??
It doesn't make sense that if I give my car to my grandmother for 1 year and she never went over say 40MPH . Then when I jump in and spin the tires that the car will not lay rubber the same as if I drove it all year!!
Any Ideas??
