Default Tuning info needed

I am fixing to install a yank 3500 converter as well as long tube headers and off road y pipe. I will also be getting rid of my rear 02 sensors as well as my air and egr. Can I get a good mail order tune to handle all of this? I will probly be installing a forged short block with a set of stage 2 ported heads I don't want to do a dyno tune until I install the new engine. Will the car be ok for a month or two with out a tune until I get the engine installed? I have a vinci/crane tuner to add fuel and do a little bit of tuning. Who is the best to do a mail order tune and handle the items I need done and what will it cost?

There are a number of vendors on this site that can do a mail tune.
