Default What could be causing this????? VIDEO

hi everyone, a friend told me to come here for answers.

Info on the set-up:
1998 Trans Am
LPE LS6 427ci. Bought the short block brand new 5 years ago. Completed it with a friend and had it installed and dyno tuned.
11.3:1 cr
ported LS6 heads
ported LS6 intake
stock ported TB
built 4L60E, 3200 stall
12 bolt rear, 3.73

First, the engine is running like the first day I started it 5 years ago and now has about 66,000 miles on it, but now its doing something wierd on start up after its already been driving around completely normal at operating temps. If I shut it down for 10-20 minutes or so and come back to it and start it up the rpm's jump all over for about 1 minute and I cannot put it in gear until it idles smooth at 975 rpm or it will stall. Check the video below....this was today after I drove it for about 15 minutes, shut it down for 15 minutes while I went into a store and started it back up. After it idles out smooth I can then drive it and it runs and performs 100% normally like it has for 5 years. Shut it down again and I have to deal with it again on the next start up. The first cold start of the day though, starts up normally and doesn't jump around, it just goes right to about 1100 rpm for 1 minute till it settles down to 975 rpm, then I drive away normally. This issue is only AFTER I restart, AFTER it has been warmed up.

Also, sometimes it will stall if the rpms dip to far down and when it does it sounds like a quick, sucking sound when it shuts down.

Someone told me it may have defaulted to an SD tune and this is what an SD tune might do on initial start up after its warmed up to operating temp. I don't know????

I dont know just throwing it out there but maybe your idle air control(IAC)

Can the IAC fail slowly and act up for weeks, or do they just fail? If they fail slowly then that just may be the problem.

But I would think he would get SES codes, right?
