Stock your S/R heads flow about the same as 462 style, double hump heads. Ported and polished they probably flow about the same as Vortec heads. That being said, I'd estimate your horsepower 375 to 395 at the crank and 420 or so torque. Which translates to 325hp 360tq or so at the wheels. Couple that with the 4 speed and 3.73's your Vette should pull strong. Are you leaving horsepower on the table? Yes
I'd shitcan the oldschool cam for a new school split duration/ lift roller cam roller lifters and some better breathing 64cc 195's or 205's. Should be good for 50 or 60 more horsepower and equal torque gain.

A roller cam is the best bet to more usable power - the increase in lift while having a shorter duration is awesome for power and driveability, I have a much smaller roller cam in my Camaro (219/219 .560/.560) with a set of ported L98 Vette heads it makes 400hp at 5600 and 425lb-ft at 3800. The heads have small ports and high flow (relatively) and make a lot of TQ for a 350...
