I've been watching movies and TV shows while driving for about 7 years no problem. You guys can laugh all you want, but it's surprisingly easy to watch and drive...

"Deluded" is probably the best word to describe anyone who thinks drinking and driving, texting and driving, or watching video and driving are safe things to do. I've watched people who claim they can safely text while driving weave down the road at 10mph below the speed of traffic (to leave extra space in front) yet they think they're good drivers. I have no doubt that you are the same so I'm glad Ohio is a long way from Florida.

Easy. Get a 64 gigabyte or even 32 gb thumb drive, put ALL the music you want on there, make playlists with folders in the thumb drive, then plug it in to your modern head unit. All for under $300 including the cost of a head unit.

Right now my old set up is cut into two pieces in my basement. I'm gonna recess it into the dash about another half an inch. I'll post some pics up here in a week. This will last me until I can get my cnc router.

Just throwing out some ideas as I have been in the conception phase of a one off product and and your design could be altered to work.
Modification:
What if that mount was made in such a way that it actually fits over existing equipment as an add-on. Maybe a half-inch cover ontop of existing doubleDin setups. This could be secured by some type of snap or clamping mechanism.
Why:
I was looking for a way to mount my android device into the dash. Some may ask why use that over your doubledin unit. I would personally like this because I have purchased and utilize the "Torqued" app on my tablet to provide monitoring/logging of my car. This would provide me nice street run logging data live, as I don't own HPTuner or any type of software. (I have a Bluetooth dongle in the OBII)

End product would be a removable enclosure that you could have the option of leaving in your vehicle to do any smart device function. However also remove depending on situation or needing access to legacy equipment behind it.

You could do the same thing I've done. A 'hidden' side slider reveals the HVAC and HeadUnit. Then you have the tablet overtop of that to have a nice UI that you can customize to your liking.
This way it looks like its supposed to be there instead of just sitting over the head unit.
I need to get some pics up of mine. I've just got to many projects right now and started another job.
