Upgrade v. conversion
For a street car, the size of the rotor is secondary to having brake pads that can actually bite the rotors you have well. Note that I'm not saying that bigger rotors are no help, they do allow more leverage to be applied, but I don't care if you have 14" rotors--if the pads suck you'll not be happy.
LS1/98+ V-6 front brakes are a nice, inexpensive, upgrade. But if you put some good pads, stainless lines and good fluid in your LT1 stuff, you'd be amazed how much better it'd stop (unless you already have good stuff on the car).
