Differences are exactly what it states...3 channel have three channels meaning 2 channels for the fronts and one shared channel for the two rear wheels using a shared reluctor wheel in the rears center.
4 channel has four independent channels which reads info from each reluctor/pickup.
Which is better...well if it works correctly 4 channel can detect differences in wheel rotation between rear tires. If you never felt your brake pedal pulse, you've never used ABS in your car. If you removed your ABS, braking will not feel any different whatsoever. You do need to use a proportioning valve to correctly bias your car without abs though as the ABS modulator unit is what biases it.
With my own added comment, I feel for an F-body it is nothing more then another thing to go wrong with the car. I never thought of F-bodies as everyday drivers though. It's a performance car out of the box ready for racing, a toy if you will. ABS is another control that takes up space and adds weight to the car. It is a hindrance for road racing applications as well as drag racing. Same goes with traction control.
Traction Control= 4 channel
No Traction Control= 3 channel
The difference is that the ASR/TCS has to be able to modulate each wheel independently of the other in a traction control event, since available traction at each wheel can be very different. So, each rear has its own wheel speed sensor and brake fluid circuit.
