Most people who rebuild calipers do so because the hydrolic piston(s) leaks causing fluid to contaminate the pads and causing air to enter the hydrolic system. In that case, you only need the lower kit in your post above. The lower kit includes the piston seals and the bleeder valve.
Always work in pairs; do both backs, or both fronts, or all four.
This is an easy repair that only requires basic hand tools and knowledge about the hydrolic system bleeding.
If the metal chatter clips that hold the pads in place are bent or busted or the caliper slider pins are not holding grease, buy the bigger kit in addition to the lower piston seal kit.
Obviously, you will need to a bunch of new brake fliud to bleed all 4 wheels. Two quart containers should be more than enough.
Some brake pads come with new chatter clips, so if you are going to replace the pads, find out if your pad kit includes chatter clips. I've never seen a pad kit that also contains slider pin seals, however.

In that case, you will need two kits. I'm not sure why kit#28 is different from kit #29, perhaps they are left and right versions.
If the rotor is wraped, you need to either replace it or have it turned (cut down) by a brake shop or parts supply house.
If it were my car, I would not do only one side.
Your axle is not bent; right?
If you know anyone who has worked on brakes and brake hydrolic systems, it would help. It is not rocket science but basic stuff like, (1) keeping everything super clean, (2) not pinching the seals, and (3) getting all the air out of the system during bleeding is critical to getting the job right.
