Default Rotors warped?

Hey if I brake at higher speeds, say over 60mph and feel the steering wheel vibrate, is that because the rotors are warped?

Usually. My OE rotors warped 5 times when the car was under warranty.

Probably deposits left on the rotors by the pads, not actual warping. Rotors can warp, but it's usually the pads.

Get yourself some good pads to go with those rotors to make sure you don't f* 'em up.

This should go without saying, but make sure when you tighten the wheel lug nuts that they are properly torqued to 100 ft*lbs in two increments in a start pattern. Improper wheel torque is usually the number one reason why rotors warp.
