hmmm, I'm half Japanese. Bet none of those that have met me would guess that.
Here is what I have observed:
Vietnamese tend to have thinner profiles, more bony/skinny faces, darker skin.
Japanese tend to have a more round face, more stocky build, eyes slightly more rounded. Fair complexion skin.
Chinese tend to have smaller eyes, thinner builds, pale skin
Korean tend to have larger faces/heads, stocky builds, little taller than others
Phillipines have dark skin, thin builds, shorter than most.

FWIW China is a huge country, most of the provinces are larger than Vietnam. So if you have to guess, Chinese is a good guess based on the numbers. But Vietnamese folks and Laotion folks tend to be very short and sometimes dark.

This reminds me of the skit Carlos Mencia did, I can't directly quote it... but it went something like:
