nightlife in DFW?

nightlife in DFW? so there i was... leaving the fox & hound after a few rounds of darts and beers 
. I was seriously craving a greek style cheesesteak or roast beef, neither which are available in this area 
. i then recall passing by some 'texadelphia' place in downtown a while back, so i figured that i'd give it a try, and assumed that they had to be open on a weekend night. i get a phone book from the bartender and try to call to make sure they were open, but the number was not working 
. i then decide to go on a wild goose hunt to find a sub shop that's open after midnight on a weekend... i decided that my best bet was to go down by TCU since college kids all go to pizza and sub shops after going to the bars, right? no, i didn't find anything besides denny's. 
i'm hoping that i just wasn't very observant... so here is the point in this rant where you guys all inform me as to where all the badass places for late night pizza and/or subs are.

yes, i saw the whattaburger's open... but i was hoping for some custom/home made stuff like from a sub shop or pizza shop, not assembly line food from a fast food place

Some of the taco stands are pretty good, most are open til 3am. For drunks though the only options really are the Waffle House, Whataburger and Ihop. Steak and Shake might be 24 hours as well, they are in most states.
