Springfield Mil Spec.45s are pretty cheap; I picked mine up for around $400 and put $125 worth of Wilson Combat parts into it (new extractor, ejector, and trigger) and it never has one problem (before I upgraded those parts, it used to stove pipe quite often). As for Kimber, their customer service is horrible because of their state contracts with local police and state .gov agencies. Glocks are outstanding handguns as well. I used to hate them, until I shot one. Then I bought a Glock 23 .40 and it is now my carry gun.
Another 1911 cheap and reliable hand gun is Charles Daly (with of course, some upgraded parts).

Not a big fan of polymer pistols....but for a 1911 on a budget you should really look at STI.
