tire sizes
How wide they can be depends on how wide the wheels are. If they're 17x8's, then 255's are stuffing them nicely, but you'll want 255/45-17, or 245/45-17 would be perfect for your speedo n stuff. Orrrr, if they're 17x9.5's (stock SS wheel size), then those 255's are pretty small. You can go up to 285 I think. For sure 275 would fill it perfectly.
If you look on the inside of your wheel, on one of the spokes, it should say what size the wheel is, or you could post a picture and someone might know from looking at it.

When you get new wheels, you have to play with the aspect ratio (middle number) to get the sidewall the right size so the overall tire diameter is the same as stock (about 26"). The stock size for a 02 z28 is 245/50-16, so you can compare sizes.
I would say look at 235/45-17's (link) as your next tires. Any skinnier and it'll probably look funny, lol.
Or you could look into some new wheels so you can throw on some wider tires. There's not a better time to buy wheels than when you need new tires (that was my excuse at least, lol). I bet those chrome wheels are heavy as **** too. Rotational mass is the #1 killer of power.
Good luck with whatever you do dude.
